Ingredients:

  • 2 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp cayenne pepper
  • 1 tsp salt
  • 1 tsp cracked black pepper
  • 1.5 lbs boneless skinless chicken breasts
  • 2 tbsp avocado oil
  • 1 tbsp unsalted butter

Instructions:

  1. Pat the chicken breasts completely dry with paper towels to ensure a proper sear.
  2. In a small bowl, whisk together the smoked paprika, garlic powder, onion powder, oregano, thyme, cayenne, salt, and pepper.
  3. Generously coat both sides of the chicken with the spice rub, pressing it firmly into the meat with your palms.
  4. Heat avocado oil in a 12-inch cast iron skillet over medium-high heat until the oil shimmers and just begins to smoke.
  5. Place chicken in the pan and sear for 5–7 minutes per side without moving, until a dark mahogany crust forms and the internal temperature reaches 165°F (74°C).
  6. During the last 2 minutes of cooking, add the unsalted butter to the pan and spoon the foaming butter over the chicken.
  7. Transfer the chicken to a plate and let it rest for 5 minutes before slicing to redistribute juices.
