Ingredients:
- 2 tbsp smoked paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp cayenne pepper
- 1 tsp salt
- 1 tsp cracked black pepper
- 1.5 lbs boneless skinless chicken breasts
- 2 tbsp avocado oil
- 1 tbsp unsalted butter
Instructions:
- Pat the chicken breasts completely dry with paper towels to ensure a proper sear.
- In a small bowl, whisk together the smoked paprika, garlic powder, onion powder, oregano, thyme, cayenne, salt, and pepper.
- Generously coat both sides of the chicken with the spice rub, pressing it firmly into the meat with your palms.
- Heat avocado oil in a 12-inch cast iron skillet over medium-high heat until the oil shimmers and just begins to smoke.
- Place chicken in the pan and sear for 5–7 minutes per side without moving, until a dark mahogany crust forms and the internal temperature reaches 165°F (74°C).
- During the last 2 minutes of cooking, add the unsalted butter to the pan and spoon the foaming butter over the chicken.
- Transfer the chicken to a plate and let it rest for 5 minutes before slicing to redistribute juices.
