Ingredients:
- 1 can (15 oz / 425g) chickpeas, drained and patted dry
- 2 tbsp (30ml) olive oil
- 1 tsp (2g) smoked paprika
- 1 tsp (2g) ground cumin
- 1/2 tsp (1g) garlic powder
- 1/4 tsp (1g) salt
- 1/4 tsp (1g) black pepper
- 1/2 cup (120g) Greek yogurt
- 1 tbsp (15ml) lemon juice
- 1 clove garlic, minced
- 1 tbsp (15ml) fresh parsley, chopped
- 4 (6 inch / 15cm) pita breads
- 1 cup (60g) shredded red cabbage
- 1/2 cup (75g) diced cucumber
- 1/2 cup (75g) cherry tomatoes, halved
Instructions:
- Preheat your oven to 400°F (200°C).
- Spread the dried chickpeas onto a parchment-lined baking sheet.
- Drizzle with olive oil and toss with paprika, cumin, garlic powder, salt, and pepper until evenly coated.
- Roast for 20 minutes, shaking the pan halfway through, until the chickpeas are mahogany-colored and have a shattering crust.
- In a small bowl, whisk together the Greek yogurt, lemon juice, and minced garlic.
- Stir in the chopped parsley until the sauce is velvety and well-combined.
- Warm the pita breads in a dry pan for 30 seconds per side until pliable.
- Slice the pitas open to create pockets.
- Spread a generous dollop of the zesty sauce inside each pita.
- Stuff with the hot chickpeas, followed by the shredded cabbage, cucumbers, and tomatoes.
