Ingredients:
- 4 (6 oz / 170g) tilapia fillets
- 1 tbsp (15ml) fresh lemon juice
- ½ tsp (3g) sea salt
- ¼ tsp (1g) cracked black pepper
- ½ cup (60g) superfine almond flour
- ½ cup (50g) grated Parmesan cheese
- 1 tsp (2g) garlic powder
- ½ tsp (1g) smoked paprika
- ¼ tsp (1g) onion powder
Instructions:
- Preheat your oven to 425°F (218°C) and line a large rimmed baking sheet with parchment paper.
- Use paper towels to press firmly onto both sides of the tilapia fillets to remove all surface moisture.
- Brush each fillet with a thin layer of lemon juice to act as a natural binder.
- In a small bowl, whisk together the almond flour, grated Parmesan cheese, garlic powder, smoked paprika, and onion powder.
- Press the top side of each fillet firmly into the breading mixture, ensuring a thick, even layer is embedded into the fish.
- Place the fillets on the baking sheet and bake for 10-12 minutes until the crust is mahogany-colored and the fish flakes easily with a fork.
