Ingredients:

  • 1 lb minute steaks (tenderized sirloin or round), cut into 1-inch strips
  • 1 tbsp avocado oil
  • 1 tsp kosher salt
  • 0.5 tsp cracked black pepper
  • 0.5 tsp onion powder
  • 4 tbsp unsalted butter, chilled and cubed
  • 4 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Pat the steak bites bone-dry with paper towels to ensure a proper sear. In a bowl, toss the steak with salt, pepper, onion powder, and the avocado oil until evenly coated.
  2. Heat a heavy-bottomed cast iron skillet over high heat until wisps of smoke appear. Add the steak bites in a single layer, working in batches if necessary to avoid overcrowding.
  3. Sear the steak undisturbed for 60 seconds per side until a deep brown crust forms. Toss for an additional 30 seconds, then immediately remove the steak to a warm plate.
  4. Reduce heat to medium. Add 4 tablespoons of cubed, chilled unsalted butter and 4 minced garlic cloves and 1 tsp Worcestershire sauce until the garlic is fragrant and golden but not brown.
  5. Toss the steak back into the pan for 30 seconds to coat, then garnish with 1 tbsp fresh parsley.
