Ingredients:

  • 2 slices whole grain bread
  • 2 large eggs
  • 1 tbsp skim milk
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded sharp cheddar cheese
  • 1 tbsp chopped fresh chives

Instructions:

  1. Preheat oven to 425°F (218°C) or air fryer to 340°F (170°C) and place bread slices on a parchment-lined baking sheet.
  2. In a small bowl, vigorously whisk the eggs, milk, salt, and pepper until the mixture is homogenous and slightly frothy.
  3. Pour the egg mixture evenly over the two slices of bread and sprinkle shredded cheese on top, pressing lightly to adhere.
  4. Bake in the oven for 8–10 minutes, or air fry for 6–8 minutes, until the eggs are set and the cheese is bubbly and browned.
  5. Garnish with chopped fresh chives before serving.
