Ingredients:
- 1 cup (115g) almond flour
- 1/2 cup (65g) whole wheat flour
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) sea salt
- 1/2 cup (120g) low-fat cottage cheese
- 1/4 cup (60g) plain Greek yogurt
- 1 large egg
- 3/4 cup (85g) sharp cheddar cheese, shredded
- 1/2 cup (60g) pre-cooked turkey sausage, finely chopped
- 1 tsp (2g) garlic powder
- 1/2 tsp (1g) black pepper
Instructions:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pulse cottage cheese in a blender for 30 seconds until smooth.
- In a large bowl, whisk together almond flour, whole wheat flour, baking powder, salt, and garlic powder.
- Create a well in the center of the dry ingredients and add the smoothed cottage cheese, Greek yogurt, and beaten egg.
- Stir until just combined, being careful not to overmix.
- Fold in the shredded cheddar cheese and chopped turkey sausage until evenly distributed.
- Scoop approximately 3 tablespoons of batter per biscuit onto the baking sheet, shaping them into rough mounds.
- Bake for 22–25 minutes until the tops are mahogany-gold and edges are firm.
- Allow biscuits to cool on the pan for 5 minutes before serving.
