Ingredients:

  • 1 cup (115g) almond flour
  • 1/2 cup (65g) whole wheat flour
  • 1 tbsp (12g) baking powder
  • 1/2 tsp (3g) sea salt
  • 1/2 cup (120g) low-fat cottage cheese
  • 1/4 cup (60g) plain Greek yogurt
  • 1 large egg
  • 3/4 cup (85g) sharp cheddar cheese, shredded
  • 1/2 cup (60g) pre-cooked turkey sausage, finely chopped
  • 1 tsp (2g) garlic powder
  • 1/2 tsp (1g) black pepper

Instructions:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pulse cottage cheese in a blender for 30 seconds until smooth.
  3. In a large bowl, whisk together almond flour, whole wheat flour, baking powder, salt, and garlic powder.
  4. Create a well in the center of the dry ingredients and add the smoothed cottage cheese, Greek yogurt, and beaten egg.
  5. Stir until just combined, being careful not to overmix.
  6. Fold in the shredded cheddar cheese and chopped turkey sausage until evenly distributed.
  7. Scoop approximately 3 tablespoons of batter per biscuit onto the baking sheet, shaping them into rough mounds.
  8. Bake for 22–25 minutes until the tops are mahogany-gold and edges are firm.
  9. Allow biscuits to cool on the pan for 5 minutes before serving.
