Ingredients:
- 1 cup shredded zucchini, squeezed dry
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 tsp vanilla extract
- 3/4 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 3/4 cup semi-sweet chocolate chips
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper.
- Grate the zucchini using the fine side of the grater. Place the shredded zucchini in a paper towel and squeeze firmly to remove all excess water.
- In a large bowl, whisk together the melted butter and granulated sugar.
- Add the eggs and vanilla extract, beating until the mixture is smooth and slightly pale.
- Fold the squeezed zucchini into the wet mixture.
- Sift in the cocoa powder, all-purpose flour, baking powder, and salt. Stir with a spatula just until combined, taking care not to overmix.
- Fold in the semi-sweet chocolate chips.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 30–35 minutes. The brownies are done when the edges are set and pulling away from the sides, and a toothpick inserted in the center comes out with a few moist crumbs.
