Ingredients:

  • 1 cup shredded zucchini, squeezed dry
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper.
  2. Grate the zucchini using the fine side of the grater. Place the shredded zucchini in a paper towel and squeeze firmly to remove all excess water.
  3. In a large bowl, whisk together the melted butter and granulated sugar.
  4. Add the eggs and vanilla extract, beating until the mixture is smooth and slightly pale.
  5. Fold the squeezed zucchini into the wet mixture.
  6. Sift in the cocoa powder, all-purpose flour, baking powder, and salt. Stir with a spatula just until combined, taking care not to overmix.
  7. Fold in the semi-sweet chocolate chips.
  8. Pour the batter into the prepared pan and smooth the top with a spatula.
  9. Bake for 30–35 minutes. The brownies are done when the edges are set and pulling away from the sides, and a toothpick inserted in the center comes out with a few moist crumbs.
