Ingredients:
- 10 oz frozen chopped spinach, thawed and squeezed bone-dry
- 3 cloves garlic, minced
- 1/4 cup green onions, finely sliced
- 1/2 tsp ground nutmeg
- 8 oz full-fat cream cheese, softened to room temperature
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 tsp Worcestershire sauce
- 1 cup shredded mozzarella
- 1/2 cup freshly grated Parmesan
- 1/2 tsp red pepper flakes
Instructions:
- Thaw the frozen greens and squeeze them until no more liquid comes out.
- Beat the 8 oz cream cheese in a bowl until smooth and free of lumps.
- Mix in the 1/2 cup sour cream and 1/2 cup mayonnaise until velvety and uniform.
- Fold in the 3 cloves minced garlic, 1/4 cup green onions, and 1/2 tsp ground nutmeg.
- Stir in the 1 tsp Worcestershire sauce and 1/2 tsp red pepper flakes.
- Break up the squeezed spinach clumps and fold them into the dairy base.
- Mix in 1/2 cup of the mozzarella and 1/4 cup of the Parmesan.
- Spread the mixture into your baking dish and sprinkle remaining cheese on top.
- Place in a 190°C (375°F) oven for 25 minutes until the edges sizzle and the top is golden.
