Ingredients:

  • 10 oz frozen chopped spinach, thawed and squeezed bone-dry
  • 3 cloves garlic, minced
  • 1/4 cup green onions, finely sliced
  • 1/2 tsp ground nutmeg
  • 8 oz full-fat cream cheese, softened to room temperature
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tsp Worcestershire sauce
  • 1 cup shredded mozzarella
  • 1/2 cup freshly grated Parmesan
  • 1/2 tsp red pepper flakes

Instructions:

  1. Thaw the frozen greens and squeeze them until no more liquid comes out.
  2. Beat the 8 oz cream cheese in a bowl until smooth and free of lumps.
  3. Mix in the 1/2 cup sour cream and 1/2 cup mayonnaise until velvety and uniform.
  4. Fold in the 3 cloves minced garlic, 1/4 cup green onions, and 1/2 tsp ground nutmeg.
  5. Stir in the 1 tsp Worcestershire sauce and 1/2 tsp red pepper flakes.
  6. Break up the squeezed spinach clumps and fold them into the dairy base.
  7. Mix in 1/2 cup of the mozzarella and 1/4 cup of the Parmesan.
  8. Spread the mixture into your baking dish and sprinkle remaining cheese on top.
  9. Place in a 190°C (375°F) oven for 25 minutes until the edges sizzle and the top is golden.
