Ingredients:

  • 1 cup (225g) cottage cheese
  • 1 cup (30g) fresh baby spinach, packed
  • 1 large (50g) egg
  • 1 tbsp (15ml) olive oil
  • 1 cup (125g) all-purpose flour
  • 1 tsp (5g) baking powder
  • ½ tsp (3g) salt
  • 1 tbsp (15ml) egg wash
  • 1 tbsp (5g) everything bagel seasoning

Instructions:

  1. Place the cottage cheese, fresh spinach, egg, and olive oil into a blender. Process on high until the mixture is a velvety, vibrant green and no visible chunks of cottage cheese remain.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. Pour the blended green mixture into the dry ingredients. Stir with a spatula until a sticky, cohesive dough forms, being careful not to overmix.
  4. Line a baking sheet with parchment paper.
  5. Scoop approximately 1/3 cup of dough for each flagel and use palms to flatten them into discs roughly 1/2 inch thick.
  6. Use a thumb to press a hole in the center of each disc to create a bagel shape.
  7. Brush the tops with egg wash and sprinkle with everything bagel seasoning.
  8. Bake at 375°F (190°C) for 20–25 minutes until the edges are golden-brown and the centers feel firm to the touch.
