Ingredients:
- 2 tbsp olive oil
- 1 tbsp brown sugar
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dried thyme
- 1/4 tsp cayenne pepper
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 (6 oz) tilapia fillets
- 1 tbsp melted butter
- 1 lime, cut into wedges
- Fresh cilantro for garnish
Instructions:
- In a small bowl, whisk together the olive oil, brown sugar, paprika, garlic powder, onion powder, thyme, cayenne, salt, and pepper until a thick paste forms.
- Pat each tilapia fillet thoroughly dry with paper towels. Rub approximately 1 tablespoon of the spice paste evenly over the top of each fillet, pressing it in firmly.
- Heat the melted butter in a large cast iron skillet or non-stick pan over medium-high heat until it begins to shimmer.
- Carefully place the fillets in the pan. Cook for 3–4 minutes without moving them, until a mahogany-colored crust forms.
- Flip the fillets gently and cook for another 2–3 minutes until the fish is opaque and flakes easily with a fork.
- Remove from heat immediately and serve with lime wedges and fresh cilantro.
