Ingredients:
- 1 lb lean ground beef
- 1 tbsp olive oil
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (28 oz) crushed tomatoes
- 1 can (10 oz) diced tomatoes with green chiles
- 1 cup beef broth (low sodium)
- 1 cup chunky salsa (medium heat)
- 1 packet (30g) taco seasoning
- 1 tbsp hidden ranch dressing mix
- 1 medium yellow onion, diced
Instructions:
- Heat the olive oil in a skillet over medium-high heat. Add the ground beef and diced onion, cooking until the beef is browned and the onions are translucent. Drain the excess grease.
- Transfer the browned beef and onion mixture into the slow cooker.
- Add the kidney beans, black beans, corn, crushed tomatoes, diced tomatoes with chiles, salsa, and beef broth to the slow cooker.
- Sprinkle the taco seasoning and ranch dressing mix over the top and stir everything together until well combined.
- Cover and cook on Low for 6-8 hours or High for 3-4 hours until the liquid has reduced into a thick, hearty consistency.
