Ingredients:

  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) crushed tomatoes
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 cup beef broth (low sodium)
  • 1 cup chunky salsa (medium heat)
  • 1 packet (30g) taco seasoning
  • 1 tbsp hidden ranch dressing mix
  • 1 medium yellow onion, diced

Instructions:

  1. Heat the olive oil in a skillet over medium-high heat. Add the ground beef and diced onion, cooking until the beef is browned and the onions are translucent. Drain the excess grease.
  2. Transfer the browned beef and onion mixture into the slow cooker.
  3. Add the kidney beans, black beans, corn, crushed tomatoes, diced tomatoes with chiles, salsa, and beef broth to the slow cooker.
  4. Sprinkle the taco seasoning and ranch dressing mix over the top and stir everything together until well combined.
  5. Cover and cook on Low for 6-8 hours or High for 3-4 hours until the liquid has reduced into a thick, hearty consistency.
