Ingredients:
- 1 lb lean ground beef (90% lean)
- 1 tbsp olive oil
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 2 tbsp low-sodium taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies, undrained
- 1/2 cup low-sodium beef broth
- 10 corn tortillas, cut into halves or quarters
- 2 cups shredded low-fat Mexican blend cheese
- 1 tsp dried oregano
Instructions:
- Heat olive oil in a skillet over medium-high heat.
- Add the ground beef and diced onion, cooking until the beef is browned and the onions are translucent.
- Stir in the minced garlic and taco seasoning, cooking for another 60 seconds until the spices smell fragrant and toasted.
- Drain any excess fat from the skillet to maintain the healthier profile of the dish.
- Spread a small amount of the cooked beef mixture across the bottom of the slow cooker.
- Place a single layer of tortilla pieces over the beef.
- Evenly distribute half of the black beans, corn, and diced tomatoes over the tortillas.
- Add another layer of beef, followed by tortillas, and the remaining bean, corn, and tomato mixture.
- Pour the beef broth over the layers and top with shredded low-fat Mexican blend cheese and dried oregano.
- Cover and cook in the slow cooker on High for 4 hours or Low for 7 hours.
