Ingredients:
- 3 large leeks, white and light green parts only, cleaned and sliced (300g)
- 3 cloves garlic, minced (15g)
- 4 tbsp unsalted butter, cubed (56g)
- 2.5 lbs Yukon Gold potatoes, peeled and cut into 1-inch cubes (1.1kg)
- 6 cups low-sodium chicken or vegetable broth (1.4L)
- 1 bay leaf
- 1 tsp dried thyme (2g)
- 1 tsp kosher salt (6g)
- 1/2 tsp black pepper (1g)
- 1/2 cup heavy cream (120ml)
Instructions:
- Slice the leeks into rounds. Place them in a colander and run cold water over them, swirling them by hand to remove all grit and sand.
- Combine the cubed potatoes, cleaned leeks, minced garlic, cubed butter, bay leaf, thyme, salt, and pepper in the slow cooker.
- Pour the broth over the vegetables until just submerged and stir gently to distribute seasonings.
- Cover and cook on High for 4 hours or Low for 7-8 hours until potatoes are tender and slide apart with a fork.
- Remove the bay leaf. Use an immersion blender to puree the soup until silky and smooth, then stir in the heavy cream.
