Ingredients:
- 1 lb lean ground beef
- 1 tbsp vegetable oil
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 2 lbs Russet potatoes, peeled and sliced into 1/8-inch rounds
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1/2 tsp paprika
- 2 cups heavy cream
- 8 oz sharp cheddar cheese, freshly grated
- 4 oz cream cheese, softened and cubed
- 1 tsp garlic powder
- 1/4 tsp cayenne pepper
Instructions:
- Heat the vegetable oil in a skillet over medium-high heat. Add the ground beef and diced onions, cooking until the meat is deeply browned and onions are translucent. Stir in the minced garlic for the final 60 seconds, then transfer the mixture to the bottom of the slow cooker.
- In a large bowl, toss the sliced potatoes with salt, black pepper, and paprika. Layer the potatoes over the beef in the slow cooker in overlapping circles.
- In a medium bowl, whisk together the heavy cream, garlic powder, and cayenne pepper. Stir in the cubed cream cheese and pour the mixture evenly over the potato layers.
- Cover and cook on Low for 6 hours.
