Ingredients:
- 2 cups (400g) short-grain Japanese rice
- 2 ¼ cups (530ml) water
- 1 tsp (6g) fine sea salt
- 1 tbsp (15ml) rice vinegar
- 4 oz (115g) cooked salmon
- 1 tsp (5g) soy sauce
- 3 oz (85g) canned tuna, drained
- 1 tbsp (15g) Japanese mayo
- 1 pinch black pepper
- 2 tbsp (30g) pickled plum paste
- 4 sheets (20g) Nori seaweed
- 2 tbsp (12g) Furikake seasoning
- 1 cup (150g) steamed edamame
- 2 large eggs
Instructions:
- Place rice in a fine-mesh strainer and rinse under cold water until the water runs clear.
- Combine rice and water in a rice cooker or pot. If using a pot, bring to a boil, then cover and simmer on low for 15 minutes.
- Remove from heat and let the rice sit, covered, for 10 minutes to ensure grains are plump.
- Gently fold in the salt and rice vinegar using a wooden paddle to avoid crushing the grains.
- Wet your hands with salted water to prevent sticking.
- Scoop about ½ cup (80g) of warm rice into your palm and create a small dimple in the center.
- Place 1 heaped teaspoon of your chosen filling (Salmon, Tuna, or Umeboshi) into the dimple.
- Gently fold the rice over the filling and press lightly to shape into a triangle or ball.
- Roll the top of the rice ball in furikake seasoning.
- Wrap a strip of nori seaweed around the bottom of the rice ball.
- Place the onigiri in a bento box and fill remaining gaps with steamed edamame and sliced tamagoyaki (cooked eggs).
