Ingredients:

  • 1.5 lbs Large Shrimp (16-20 count), peeled and deveined
  • 1/4 tsp Baking soda
  • 1/2 tsp Kosher salt
  • 2 tsp Smoked paprika
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1/2 tsp Dried oregano
  • 1/2 tsp Dried thyme
  • 1/4 tsp Cayenne pepper
  • 1/2 tsp Black pepper
  • 2 tbsp Unsalted butter
  • 2 cloves Garlic, minced
  • 1 tbsp Neutral oil (avocado or grapeseed)
  • Fresh parsley and lemon wedges for serving

Instructions:

  1. Pat the shrimp completely dry with paper towels. In a large mixing bowl, toss the shrimp with 1/2 tsp kosher salt and 1/4 tsp baking soda. Let it sit for 5 minutes.
  2. In a small bowl, combine smoked paprika, garlic powder, onion powder, dried oregano, dried thyme, cayenne pepper, and black pepper. Sprinkle the spice blend over the shrimp and toss until evenly coated.
  3. Heat 1 tbsp neutral oil in a large cast-iron skillet over medium-high heat until shimmering. Add shrimp in a single layer and sear for 2 minutes without moving them to develop a crust. Flip and cook for an additional 1 minute.
  4. Reduce heat to low. Add 2 tbsp unsalted butter and minced garlic to the pan. Once the butter foams, toss the shrimp for 30 seconds to glaze. Remove from heat immediately and serve with fresh parsley and lemon wedges.
