Ingredients:
- 4 (6 oz) Tilapia fillets
- 1/4 cup mayonnaise
- 1/2 tsp garlic powder
- 1/2 cup Panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tbsp fresh parsley, finely chopped
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat the tilapia fillets completely dry with paper towels to ensure the crust adheres.
- In a shallow dish, whisk together the Panko, Parmesan, parsley, smoked paprika, salt, and pepper.
- In a small bowl, mix the mayonnaise and garlic powder until smooth.
- Brush a thin, even layer of the mayonnaise mixture over the top and sides of each fillet.
- Press the mayo-coated side of the fillets firmly into the Parmesan mixture, ensuring the breading is packed tightly.
- Place fillets on the prepared baking sheet and bake for 12–15 minutes until the crust is golden brown and the fish flakes easily.
- Optional: Broil on high for the final 60 seconds for extra crispiness.
