Ingredients:
- 1.5 cups (190g) all-purpose flour
- 2 tbsp (25g) granulated sugar
- 2 tsp (10g) baking powder
- 0.5 tsp (3g) salt
- 1 cup (240ml) whole milk
- 1 large egg
- 3 tbsp (42g) melted unsalted butter
- 1 tsp (5ml) vanilla extract
- 0.5 cup (75g) mini chocolate chips (optional)
- 0.5 cup (75g) fresh blueberries (optional)
Instructions:
- Preheat your oven to 375°F (190°C). Grease a 24-count mini muffin pan thoroughly with non-stick spray or insert paper liners.
- In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
- In a separate large bowl, beat the egg into the whole milk, melted unsalted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and fold with a spatula until just combined, stopping while a few small lumps of flour remain.
- Spoon the batter into the muffin tins, filling each about ¾ full.
- Gently press your chosen mix-ins (such as chocolate chips or blueberries) into the top of each muffin.
- Bake for 10–12 minutes until the tops spring back when lightly touched and a toothpick inserted into the center comes out clean.
- Let them cool in the pan for 2 minutes before moving
