Ingredients:

  • 1.5 cups (190g) all-purpose flour
  • 2 tbsp (25g) granulated sugar
  • 2 tsp (10g) baking powder
  • 0.5 tsp (3g) salt
  • 1 cup (240ml) whole milk
  • 1 large egg
  • 3 tbsp (42g) melted unsalted butter
  • 1 tsp (5ml) vanilla extract
  • 0.5 cup (75g) mini chocolate chips (optional)
  • 0.5 cup (75g) fresh blueberries (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 24-count mini muffin pan thoroughly with non-stick spray or insert paper liners.
  2. In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
  3. In a separate large bowl, beat the egg into the whole milk, melted unsalted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and fold with a spatula until just combined, stopping while a few small lumps of flour remain.
  5. Spoon the batter into the muffin tins, filling each about ¾ full.
  6. Gently press your chosen mix-ins (such as chocolate chips or blueberries) into the top of each muffin.
  7. Bake for 10–12 minutes until the tops spring back when lightly touched and a toothpick inserted into the center comes out clean.
  8. Let them cool in the pan for 2 minutes before moving
