Ingredients:

  • 4 (6 oz) white fish fillets (Tilapia, Cod, or Halibut)
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 2 tbsp all-purpose flour
  • 1 tbsp avocado oil
  • 2 tbsp unsalted butter
  • 1 tbsp fresh lemon juice
  • 1 clove garlic, smashed

Instructions:

  1. Pat each fish fillet aggressively dry with paper towels to ensure a proper sear.
  2. Sprinkle salt and pepper evenly on both sides of the fillets.
  3. Lightly dredge the fillets in flour and shake off all excess (optional).
  4. Place a skillet over medium-high heat and add avocado oil until it begins to shimmer.
  5. Lay fillets in the pan and press down lightly with a spatula for 5 seconds.
  6. Sear undisturbed for 3–4 minutes until the fish naturally releases from the pan.
  7. Flip the fillets once the edges are opaque and the bottom is golden-brown.
  8. Add butter, smashed garlic, and lemon juice to the pan.
  9. Tilt the pan and spoon the bubbling lemon-garlic butter over the fish for the final 2–3 minutes.
  10. Remove from heat when internal temperature reaches 145°F (63°C).
