Ingredients:
- 4 (6 oz) white fish fillets (Tilapia, Cod, or Halibut)
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 2 tbsp all-purpose flour
- 1 tbsp avocado oil
- 2 tbsp unsalted butter
- 1 tbsp fresh lemon juice
- 1 clove garlic, smashed
Instructions:
- Pat each fish fillet aggressively dry with paper towels to ensure a proper sear.
- Sprinkle salt and pepper evenly on both sides of the fillets.
- Lightly dredge the fillets in flour and shake off all excess (optional).
- Place a skillet over medium-high heat and add avocado oil until it begins to shimmer.
- Lay fillets in the pan and press down lightly with a spatula for 5 seconds.
- Sear undisturbed for 3–4 minutes until the fish naturally releases from the pan.
- Flip the fillets once the edges are opaque and the bottom is golden-brown.
- Add butter, smashed garlic, and lemon juice to the pan.
- Tilt the pan and spoon the bubbling lemon-garlic butter over the fish for the final 2–3 minutes.
- Remove from heat when internal temperature reaches 145°F (63°C).
