Ingredients:
- 4 (6 oz) tilapia fillets
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 cup all-purpose flour
- 2 tbsp cornstarch
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1 tbsp fresh lemon juice
Instructions:
- Pat the tilapia fillets completely dry using paper towels. Season both sides evenly with salt, pepper, paprika, and garlic powder.
- Whisk the flour and cornstarch in a shallow dish. Press each fillet firmly into the mixture, then shake off the excess to create a translucent coating.
- Heat olive oil in a large non-stick or cast-iron skillet over medium-high heat until shimmering. Sear fillets for 3–4 minutes without moving them until a golden-brown crust forms.
- Flip the fillets and immediately add the butter to the pan. Spoon the foaming melted butter over the fish for the final 2–3 minutes of cooking.
- Remove fillets once they reach an internal temperature of 145°F (63°C) and flake easily with a fork. Drizzle with fresh lemon juice before serving.
