Ingredients:

  • 4 (6 oz) tilapia fillets
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 cup all-purpose flour
  • 2 tbsp cornstarch
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tbsp fresh lemon juice

Instructions:

  1. Pat the tilapia fillets completely dry using paper towels. Season both sides evenly with salt, pepper, paprika, and garlic powder.
  2. Whisk the flour and cornstarch in a shallow dish. Press each fillet firmly into the mixture, then shake off the excess to create a translucent coating.
  3. Heat olive oil in a large non-stick or cast-iron skillet over medium-high heat until shimmering. Sear fillets for 3–4 minutes without moving them until a golden-brown crust forms.
  4. Flip the fillets and immediately add the butter to the pan. Spoon the foaming melted butter over the fish for the final 2–3 minutes of cooking.
  5. Remove fillets once they reach an internal temperature of 145°F (63°C) and flake easily with a fork. Drizzle with fresh lemon juice before serving.
