Ingredients:

  • 4 (6 oz / 170 g) tilapia fillets
  • 1/2 tsp (3 g) kosher salt
  • 1/4 tsp (1 g) cracked black pepper
  • 1/2 tsp (2 g) garlic powder
  • 2 tbsp (28 g) unsalted butter, melted
  • 1 tbsp (15 ml) fresh lemon juice
  • 1 tsp (5 ml) lemon zest
  • 1 tbsp (3 g) fresh parsley, finely chopped
  • 1 tsp (1 g) dried oregano
  • 2 cloves (6 g) garlic, minced

Instructions:

  1. Use paper towels to pat each tilapia fillet completely dry on both sides to prevent the fish from steaming.
  2. Sprinkle the salt, black pepper, and garlic powder evenly over both sides of the fillets.
  3. In a small bowl, whisk together the melted butter, lemon juice, zest, minced garlic, parsley, and oregano until emulsified.
  4. Using a brush or spoon, generously coat the top of each fillet with the lemon herb mixture, pressing the herbs into the flesh.
  5. Place fillets on a lined baking sheet and bake at 400°F (200°C) for 10–12 minutes until the flesh is opaque white and flakes easily with a fork.
  6. Remove from the oven and let the fish sit for 2 minutes to allow residual heat to finish the center.
