Ingredients:

  • 1.5 lbs white fish fillets (Cod, Tilapia, or Halibut)
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter, melted
  • 1 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 2 tbsp fresh parsley, chopped
  • 1 lemon, sliced into thin rounds

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Pat the fish fillets completely dry with paper towels and season both sides lightly with salt and pepper.
  3. In a small bowl, whisk together the melted butter, olive oil, lemon juice, lemon zest, minced garlic, and dried herbs.
  4. Place the fillets on the prepared pan and drizzle the lemon butter mixture evenly over each piece.
  5. Top each fillet with a thin slice of lemon for added moisture and visual appeal.
  6. Bake in the center rack of the oven for 12–15 minutes until the fish is opaque throughout, the sauce is bubbling, and the internal temperature reaches 145°F (63°C).
  7. Remove from the oven and immediately sprinkle with fresh parsley.
