Ingredients:
- 1.5 lbs white fish fillets (Cod, Tilapia, or Halibut)
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1 tbsp olive oil
- 2 tbsp unsalted butter, melted
- 1 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 2 tbsp fresh parsley, chopped
- 1 lemon, sliced into thin rounds
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
- Pat the fish fillets completely dry with paper towels and season both sides lightly with salt and pepper.
- In a small bowl, whisk together the melted butter, olive oil, lemon juice, lemon zest, minced garlic, and dried herbs.
- Place the fillets on the prepared pan and drizzle the lemon butter mixture evenly over each piece.
- Top each fillet with a thin slice of lemon for added moisture and visual appeal.
- Bake in the center rack of the oven for 12–15 minutes until the fish is opaque throughout, the sauce is bubbling, and the internal temperature reaches 145°F (63°C).
- Remove from the oven and immediately sprinkle with fresh parsley.
