Ingredients:
- 1/2 cup (45g) quick oats
- 1/2 cup (120ml) unsweetened almond milk
- 1/4 cup (60g) plain Greek yogurt
- 1 tbsp (12g) chia seeds
- 1 tsp (5ml) maple syrup
- 1/4 tsp (1g) fine sea salt
- 1/4 cup (30g) fresh blueberries
- 1 tsp (5g) vanilla extract
- 1/4 tsp (1g) ground cinnamon
Instructions:
- Combine the quick oats, chia seeds, salt, and cinnamon in a 8 oz glass Mason jar.
- Pour in the almond milk, Greek yogurt, maple syrup, and vanilla extract. Stir vigorously until the mixture is a smooth, thick slurry and no dry clumps of oats remain at the bottom.
- Gently fold in half of the fresh berries.
- Seal the jar tightly with the lid and refrigerate for at least 6 hours, or overnight.
- Give the oats a quick stir to redistribute the cream and top with the remaining fresh berries before serving.
