Ingredients:

  • 4 (6 oz / 170g) Tilapia fillets, patted dry
  • 1 tbsp (15ml) Lemon juice, freshly squeezed
  • ½ tsp (3g) Salt
  • ¼ tsp (1g) Black pepper
  • ½ cup (60g) Super-fine almond flour
  • ¼ cup (25g) Grated Parmesan cheese (finely powdered)
  • 3 tbsp (42g) Unsalted butter, melted
  • 1 tsp (3g) Garlic powder
  • ½ tsp (1g) Paprika

Instructions:

  1. Preheat the oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Firmly pat each tilapia fillet dry with paper towels to remove excess moisture.
  3. Arrange the fillets on the prepared baking sheet and drizzle with lemon juice, salt, and black pepper.
  4. In a small mixing bowl, whisk together the melted butter, almond flour, parmesan cheese, garlic powder, and paprika until a thick paste forms.
  5. Press approximately 1-2 tablespoons of the almond-parmesan mixture onto the top of each fillet, spreading it to the edges to seal in moisture.
  6. Bake on the center rack for 10–12 minutes until the crust is deep golden brown and the fish is opaque and flakes easily with a fork.
  7. Optional: Broil on high for the final 60 seconds for an extra-crispy crust, monitoring closely to prevent burning.
