Ingredients:
- 4 (6 oz / 170g) Tilapia fillets, patted dry
- 1 tbsp (15ml) Lemon juice, freshly squeezed
- ½ tsp (3g) Salt
- ¼ tsp (1g) Black pepper
- ½ cup (60g) Super-fine almond flour
- ¼ cup (25g) Grated Parmesan cheese (finely powdered)
- 3 tbsp (42g) Unsalted butter, melted
- 1 tsp (3g) Garlic powder
- ½ tsp (1g) Paprika
Instructions:
- Preheat the oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- Firmly pat each tilapia fillet dry with paper towels to remove excess moisture.
- Arrange the fillets on the prepared baking sheet and drizzle with lemon juice, salt, and black pepper.
- In a small mixing bowl, whisk together the melted butter, almond flour, parmesan cheese, garlic powder, and paprika until a thick paste forms.
- Press approximately 1-2 tablespoons of the almond-parmesan mixture onto the top of each fillet, spreading it to the edges to seal in moisture.
- Bake on the center rack for 10–12 minutes until the crust is deep golden brown and the fish is opaque and flakes easily with a fork.
- Optional: Broil on high for the final 60 seconds for an extra-crispy crust, monitoring closely to prevent burning.
