Ingredients:
- 1.5 lbs boneless skinless chicken thighs
- 2 tbsp avocado oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 0.5 tsp dried oregano
- 1 tsp sea salt
- 0.5 tsp cracked black pepper
- 0.25 tsp cayenne pepper
Instructions:
- Preheat your oven to 200°C (400°F) until the indicator light clicks off.
- Pat the 1.5 lbs of chicken thighs completely dry using paper towels.
- Place the chicken in a large bowl and drizzle with 2 tbsp avocado oil.
- Whisk the paprika, garlic powder, onion powder, oregano, salt, pepper, and cayenne in a small ramekin.
- Sprinkle the spice mix over the chicken and toss until every crevice is coated.
- Arrange the thighs on a baking sheet, ensuring they are not touching.
- Bake for 25 minutes until the edges are dark golden and bubbling.
- Check the internal temperature with a thermometer; it should read 74°C (165°F).
- Remove from the oven and let the meat rest for 5 minutes.
- Serve immediately while the spice crust is still firm.
