Ingredients:
- 2 tbsp brown sugar, packed
- 1 tsp ground allspice
- 1 tsp dried thyme
- 1/2 tsp cayenne pepper
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1 tbsp fresh lime juice
- 2 6-oz tilapia fillets
- 1 lime, quartered
- 1 tbsp melted butter
Instructions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and lightly grease it with oil to prevent sticking.
- In a small bowl, whisk together the brown sugar, allspice, thyme, cayenne, garlic powder, salt, pepper, olive oil, and lime juice until a thick paste forms.
- Place the patted-dry tilapia fillets on the foil-lined sheet and brush the top of each fillet with melted butter.
- Spoon the jerk paste over the fillets, spreading it evenly from edge to edge and pressing gently into the flesh.
- Bake on the center rack for 7 to 9 minutes until the fish is opaque and the spice crust is caramelized. Do not flip the fillets.
- Remove from the oven, immediately squeeze fresh lime wedges over the fillets, and let rest for 2 minutes before serving.
