Ingredients:

  • 2 tbsp brown sugar, packed
  • 1 tsp ground allspice
  • 1 tsp dried thyme
  • 1/2 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1 tbsp fresh lime juice
  • 2 6-oz tilapia fillets
  • 1 lime, quartered
  • 1 tbsp melted butter

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and lightly grease it with oil to prevent sticking.
  2. In a small bowl, whisk together the brown sugar, allspice, thyme, cayenne, garlic powder, salt, pepper, olive oil, and lime juice until a thick paste forms.
  3. Place the patted-dry tilapia fillets on the foil-lined sheet and brush the top of each fillet with melted butter.
  4. Spoon the jerk paste over the fillets, spreading it evenly from edge to edge and pressing gently into the flesh.
  5. Bake on the center rack for 7 to 9 minutes until the fish is opaque and the spice crust is caramelized. Do not flip the fillets.
  6. Remove from the oven, immediately squeeze fresh lime wedges over the fillets, and let rest for 2 minutes before serving.
