Ingredients:

  • 2 cups (220g) almond flour
  • 1/4 cup (30g) coconut flour
  • 1 cup (225g) cottage cheese
  • 2 large (100g) eggs
  • 1 tbsp (12g) baking powder
  • 1/2 tsp (3g) sea salt
  • 2 tbsp (30ml) melted unsalted butter
  • 1 cup (115g) sharp cheddar cheese, shredded
  • 2 tbsp (8g) fresh chives, finely chopped
  • 1/4 tsp (1.5g) garlic powder

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Pulse the cottage cheese in a blender or food processor until it reaches a velvety, cream like consistency.
  3. In a large mixing bowl, whisk together the almond flour, coconut flour, baking powder, salt, and garlic powder until no clumps remain.
  4. Stir in the blended cottage cheese, eggs, and melted butter until the batter is smooth and combined.
  5. Gently fold in the shredded cheddar cheese and chopped chives using a spatula until evenly distributed.
  6. Scoop the dough into 12 equal mounds on the baking sheet.
  7. Bake for 18–22 minutes until the tops are golden brown and the edges are firm.
  8. Remove from oven and let them sit on the pan for 5 minutes until they set completely.
