Ingredients:
- 2 cups (220g) almond flour
- 1/4 cup (30g) coconut flour
- 1 cup (225g) cottage cheese
- 2 large (100g) eggs
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) sea salt
- 2 tbsp (30ml) melted unsalted butter
- 1 cup (115g) sharp cheddar cheese, shredded
- 2 tbsp (8g) fresh chives, finely chopped
- 1/4 tsp (1.5g) garlic powder
Instructions:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Pulse the cottage cheese in a blender or food processor until it reaches a velvety, cream like consistency.
- In a large mixing bowl, whisk together the almond flour, coconut flour, baking powder, salt, and garlic powder until no clumps remain.
- Stir in the blended cottage cheese, eggs, and melted butter until the batter is smooth and combined.
- Gently fold in the shredded cheddar cheese and chopped chives using a spatula until evenly distributed.
- Scoop the dough into 12 equal mounds on the baking sheet.
- Bake for 18–22 minutes until the tops are golden brown and the edges are firm.
- Remove from oven and let them sit on the pan for 5 minutes until they set completely.
