Ingredients:
- 12 large eggs
- 1/2 tsp baking soda
- 1 tbsp salt
Instructions:
- Fill a pot with enough water to cover eggs by at least an inch, bring to a rolling boil over high heat, and stir in baking soda and salt if using.
- Lower the heat to a simmer and carefully lower the eggs into the water one by one using a slotted spoon to avoid cracking.
- Turn the heat back up to medium-high to maintain a gentle boil and cook for 12 minutes for fully set, classic hard-boiled yolks.
- Immediately transfer the eggs from the boiling water into an ice bath made of ice cubes and cold water.
- Let the eggs chill in the ice bath for 10 to 15 minutes to ensure the shell pulls away from the membrane.
- Gently tap the egg on a hard surface, roll it under your palm to loosen the shell, and peel starting from the wider bottom end.
