Ingredients:
- 2 lbs Yukon Gold or Red Bliss potatoes
- 2 tbsp extra virgin olive oil
- 1 tbsp kosher salt
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 0.5 tsp freshly cracked black pepper
- 0.5 tsp dried rosemary
Instructions:
- Scrub the potatoes (keeping skins on) and cut them into 1-inch thick wedges or rounds.
- Submerge the potato pieces in a large pot of cold, heavily salted water. Bring to a boil and simmer for 5-7 minutes until the edges are slightly softened.
- Drain the potatoes in a colander and let them steam dry for 2 minutes to remove excess surface moisture.
- In a large mixing bowl, toss the warm potatoes with olive oil, garlic powder, smoked paprika, black pepper, and dried rosemary until evenly coated.
- Preheat the grill to 400°F (200°C). Grill the potatoes over direct heat for 10 minutes per side until the skin is blistering and charred.
