Ingredients:

  • 4 boneless skinless chicken breasts (approx. 1.5 lbs / 680g)
  • 1 tsp (5g) salt
  • 1/2 tsp (3g) black pepper
  • 2 tbsp (30ml) olive oil
  • 1/2 cup (55g) unsalted butter, melted
  • 4 cloves (20g) garlic, minced
  • 1/2 cup (50g) freshly grated Parmesan cheese
  • 1 tsp (2g) dried oregano
  • 1/4 tsp (1g) paprika
  • 2 tbsp (15g) fresh parsley, chopped

Instructions:

  1. Pat the chicken breasts completely dry with paper towels and season both sides evenly with salt and pepper.
  2. In a small bowl, whisk together the melted butter, minced garlic, Parmesan, oregano, and paprika until a thick paste forms.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat until it shimmers.
  4. Place the chicken in the pan and sear for 3–5 minutes per side until a deep golden-brown color is achieved.
  5. Reduce heat to low. Spoon the Garlic Parmesan mixture generously over the top of each breast, spreading it to the edges.
  6. Transfer the skillet to a preheated oven at 400°F (200°C) and bake for 8–12 minutes, or until a meat thermometer reads 165°F (74°C).
  7. Remove from oven and let the chicken rest for 5 minutes before slicing.
  8. Garnish with chopped fresh parsley.
