Ingredients:

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tsp (5ml) pure vanilla extract
  • 1/3 cup (35g) unsweetened cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • 1/4 tsp (1.5g) salt
  • 1/4 tsp (1.5g) baking soda
  • 1 1/2 cups (170g) grated zucchini, squeezed slightly to remove excess water
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan and line it with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, whisk together the melted butter and granulated sugar until smooth.
  3. Stir in the eggs one at a time, followed by the vanilla extract, until the mixture is glossy.
  4. Sift together the cocoa powder, all-purpose flour, salt, and baking soda.
  5. Slowly fold the dry ingredients into the wet mixture using a spatula. Stop as soon as no streaks of flour remain to avoid overmixing.
  6. Fold in the grated zucchini and semi-sweet chocolate chips until evenly distributed.
  7. Pour the batter into the prepared baking pan and bake for 40 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
