Ingredients:
- 1/2 cup (115g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) pure vanilla extract
- 1/3 cup (35g) unsweetened cocoa powder
- 1/2 cup (65g) all-purpose flour
- 1/4 tsp (1.5g) salt
- 1/4 tsp (1.5g) baking soda
- 1 1/2 cups (170g) grated zucchini, squeezed slightly to remove excess water
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan and line it with parchment paper, leaving an overhang on the sides.
- In a medium bowl, whisk together the melted butter and granulated sugar until smooth.
- Stir in the eggs one at a time, followed by the vanilla extract, until the mixture is glossy.
- Sift together the cocoa powder, all-purpose flour, salt, and baking soda.
- Slowly fold the dry ingredients into the wet mixture using a spatula. Stop as soon as no streaks of flour remain to avoid overmixing.
- Fold in the grated zucchini and semi-sweet chocolate chips until evenly distributed.
- Pour the batter into the prepared baking pan and bake for 40 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
