Ingredients:

  • 6 (6 oz / 170g) Tilapia fillets
  • 1 tsp (6g) Salt
  • ½ tsp (1g) Black pepper
  • 1 tsp (2g) Smoked paprika
  • 1 tsp (3g) Garlic powder
  • 1 cup (125g) All-purpose flour
  • ¼ cup (30g) Cornstarch
  • 1 cup (235ml) Vegetable oil

Instructions:

  1. Pat every fillet with paper towels until the surface is bone-dry. Season the fish evenly with the salt, pepper, paprika, and garlic powder.
  2. Whisk the flour and cornstarch in a shallow bowl. Press each fillet firmly into the mixture, then shake vigorously to ensure a thin, translucent veil of flour without clumps.
  3. Heat oil over medium-high heat in a large non-stick skillet or cast iron pan. Carefully lay fillets away from you and fry for 3–4 minutes per side until the edges turn deep mahogany-gold.
  4. Immediately transfer the fish to a wire rack to allow air to circulate and maintain the crispiness of the crust.
