Ingredients:
- 4 slices (60g) thick-cut smoked bacon, diced
- 4 tbsp (56g) unsalted butter
- 1 medium (110g) yellow onion, finely diced
- 3 cloves (9g) garlic, minced
- 2 medium (120g) carrots, diced small
- 3 lbs (1.36kg) Yukon Gold potatoes, peeled and cubed
- 4 cups (950ml) low-sodium chicken broth
- 1 tsp (5g) dried thyme
- 2 cups (480ml) heavy cream
- 1 cup (115g) sharp cheddar cheese, shredded
- ½ cup (120ml) sour cream
Instructions:
- Place the diced bacon in the pot over medium heat. Cook until the bacon is crisp and the fat has rendered.
- Use a slotted spoon to remove the bacon bits and set them aside on a paper towel.
- Add the butter to the remaining bacon fat. Once melted, toss in the diced onion and carrots. Sauté for 5–7 minutes until the onions are translucent.
- Stir in the minced garlic and thyme, cooking for just 60 seconds until fragrant.
- Add the cubed potatoes to the pot, stirring to coat them in the aromatic butter.
- Pour in the chicken broth. Increase heat to bring the liquid to a gentle boil, then immediately reduce to low.
- Cover with a lid and simmer for 15–20 minutes, or until the potatoes are fork-tender.
- For a velvety finish, use an immersion blender to pulse the soup 3–4 times (do not over-blend).
- Stir in the heavy cream and sour cream over low heat.
- Slowly fold in the shredded cheddar cheese, stirring constantly until melted and combined.
