Ingredients:

  • 4 (6 oz / 170 g) frozen white fish fillets (Tilapia, Cod, or Mahi Mahi)
  • 3 tbsp (42 g) unsalted butter, melted
  • 1 tbsp (15 ml) olive oil
  • 1 tbsp (15 ml) fresh lemon juice
  • 2 cloves (6 g) garlic, minced
  • 1/2 tsp (3 g) smoked paprika
  • 1/2 tsp (3 g) kosher salt
  • 1/4 tsp (1 g) cracked black pepper
  • 1 tsp (2 g) dried parsley

Instructions:

  1. Preheat your oven to 425°F (218°C) and line a large rimmed baking sheet with parchment paper.
  2. Arrange the frozen fillets on the pan, ensuring they are not touching to allow hot air to circulate.
  3. In a small bowl, whisk together the melted butter, olive oil, lemon juice, garlic, paprika, salt, pepper, and parsley.
  4. Generously brush the glaze mixture over the top and sides of each frozen fillet.
  5. Bake in the center rack of the oven for 15–20 minutes. For a deeper crust, turn the broiler on for the final 2 minutes.
  6. Remove from oven once the internal temperature reaches 145°F (63°C) and the fish flakes easily with a fork.
