Ingredients:

  • 3 large overripe bananas, mashed (approx. 1.5 cups)
  • 0.5 cup neutral oil
  • 0.75 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon fine sea salt
  • 0.5 teaspoon ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (180°C) and grease a 9x5 inch loaf pan.
  2. Mash 3 bananas in a large bowl until mostly smooth with a few small lumps.
  3. Whisk in 0.5 cup neutral oil and 0.75 cup granulated sugar until the mixture looks glossy.
  4. Add 1 egg and 1 teaspoon vanilla, beating until fully incorporated and pale.
  5. Sift together 1.5 cups flour, 1 teaspoon baking soda, 0.5 teaspoon salt, and 0.5 teaspoon cinnamon.
  6. Fold the dry ingredients into the wet until just combined and no white streaks remain.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake 55 minutes until a toothpick comes out clean or with dry crumbs.
  9. Cool in the pan for 10 minutes until the edges pull away slightly.
  10. Transfer to a wire rack to cool completely before slicing.
