Ingredients:

  • 1 box (15.25 oz) Yellow Cake Mix
  • 3 large overripe bananas (approx. 340g mashed)
  • 2 large eggs

Instructions:

  1. Preheat your oven to 350°F (180°C). Grease a 9x5 inch loaf pan generously with butter or non stick spray. Note: Using butter adds a nice salty crust to the bottom.
  2. Peel the 3 large bananas and place them in your mixing bowl.
  3. Mash the bananas until they are almost liquidy until only tiny lumps remain.
  4. Add the 2 large eggs to the banana mash.
  5. Whisk the eggs and bananas vigorously until the mixture looks pale and frothy.
  6. Gradually add the yellow cake mix to the wet ingredients.
  7. Fold the mix in using a spatula until no dry streaks of flour are visible. Note: Overmixing will make the bread rubbery instead of tender.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 45 to 55 minutes until a toothpick comes out clean and the top is golden brown.
  10. Cool in the pan for 10 minutes, then move to a wire rack to finish cooling.
