Ingredients:
- 4cups frozen pineapple chunks
- 1/2cup unsweetened pineapple juice
- 1/2cup full-fat coconut milk
- 1tbsp lime juice
- 1tbsp agave nectar
Instructions:
- The Tempering Phase: Remove frozen pineapple chunks from the freezer and let them sit at room temperature for 3–5 minutes to allow for smoother emulsification.
- The High-Speed Blitz: Place the tempered pineapple, juice, coconut milk, lime juice, and agave into a high-speed blender. Start on the lowest speed, then quickly increase to high. Use a tamper to push the fruit into the blades.
- Emulsification: Blend for only 30–45 seconds until the mixture reaches a thick, pale yellow consistency with a 'shattered silk' texture.
- The Aeration Swirl: Immediately transfer the mixture to a piping bag fitted with a large star tip. Pipe into chilled bowls using a circular motion to create the signature swirl.
