Ingredients:

  • 1 slice (40g) sprouted grain or 100% whole-grain bread
  • 1 tsp (5ml) extra virgin olive oil
  • ½ medium (75g) ripe avocado
  • 1 tsp (5ml) fresh lime juice
  • 1 pinch (0.5g) sea salt
  • 1 pinch (0.5g) cracked black pepper
  • 1 large (50g) egg
  • 1 tsp (5ml) avocado oil or olive oil
  • 1 pinch (0.5g) paprika

Instructions:

  1. Toast the sprouted grain bread until it reaches a mahogany-colored, firm consistency. If using a skillet, brush lightly with 1 tsp olive oil and sear each side for 2 minutes.
  2. Scoop the avocado into a small bowl and mash with a fork until it reaches a chunky yet spreadable consistency.
  3. Stir the lime juice, salt, and pepper into the mashed avocado.
  4. Heat 1 tsp of avocado oil or olive oil in a non-stick skillet over medium heat and crack the egg gently into the pan.
  5. Cook until the whites are completely set and opaque. For over-easy, flip the egg and cook for an additional 30 seconds.
  6. Spread the smashed avocado evenly across the toasted bread, reaching all the way to the edges.
  7. Carefully slide the egg on top of the avocado and garnish with paprika.
