Ingredients:
- 1 slice (40g) sprouted grain or 100% whole-grain bread
- 1 tsp (5ml) extra virgin olive oil
- ½ medium (75g) ripe avocado
- 1 tsp (5ml) fresh lime juice
- 1 pinch (0.5g) sea salt
- 1 pinch (0.5g) cracked black pepper
- 1 large (50g) egg
- 1 tsp (5ml) avocado oil or olive oil
- 1 pinch (0.5g) paprika
Instructions:
- Toast the sprouted grain bread until it reaches a mahogany-colored, firm consistency. If using a skillet, brush lightly with 1 tsp olive oil and sear each side for 2 minutes.
- Scoop the avocado into a small bowl and mash with a fork until it reaches a chunky yet spreadable consistency.
- Stir the lime juice, salt, and pepper into the mashed avocado.
- Heat 1 tsp of avocado oil or olive oil in a non-stick skillet over medium heat and crack the egg gently into the pan.
- Cook until the whites are completely set and opaque. For over-easy, flip the egg and cook for an additional 30 seconds.
- Spread the smashed avocado evenly across the toasted bread, reaching all the way to the edges.
- Carefully slide the egg on top of the avocado and garnish with paprika.
