Ingredients:
- 2 Large English Cucumbers (approx. 700g), sliced into 1/8-inch rounds
- 0.5 medium Red Onion (approx. 100g), shaved into translucent half-moons
- 1 tsp Sea Salt
- 0.5 tsp Cracked Black Pepper
- 0.5 cup Plain Greek Yogurt, full fat (120g)
- 2 tbsp Mayonnaise (30g)
- 1 tbsp White Wine Vinegar
- 1 tsp Granulated Sugar
- 3 tbsp fresh Dill, finely chopped
- 1 clove Garlic, grated into a paste
Instructions:
- Wash the English cucumbers and slice them into 1/8 inch rounds. Slice the red onion into translucent half moons using a sharp knife or mandoline.
- In a small bowl, whisk the Greek yogurt, mayonnaise, white wine vinegar, and sugar until the sugar is fully dissolved.
- Grate the garlic clove directly into the dressing and stir in the sea salt and cracked black pepper.
- Fold in the finely chopped fresh dill until the dressing looks speckled and green.
- Place the cucumbers and onions in a large bowl.
- Pour the dressing over the vegetables and toss gently until every slice is shimmering and coated.
- Taste a slice. If it’s too tart, add a tiny pinch of sugar; if it’s flat, add a tiny pinch of salt.
- Transfer to a chilled bowl until the salad feels icy to the touch. Serve immediately.
