Ingredients:

  • 2 Large English Cucumbers (approx. 700g), sliced into 1/8-inch rounds
  • 0.5 medium Red Onion (approx. 100g), shaved into translucent half-moons
  • 1 tsp Sea Salt
  • 0.5 tsp Cracked Black Pepper
  • 0.5 cup Plain Greek Yogurt, full fat (120g)
  • 2 tbsp Mayonnaise (30g)
  • 1 tbsp White Wine Vinegar
  • 1 tsp Granulated Sugar
  • 3 tbsp fresh Dill, finely chopped
  • 1 clove Garlic, grated into a paste

Instructions:

  1. Wash the English cucumbers and slice them into 1/8 inch rounds. Slice the red onion into translucent half moons using a sharp knife or mandoline.
  2. In a small bowl, whisk the Greek yogurt, mayonnaise, white wine vinegar, and sugar until the sugar is fully dissolved.
  3. Grate the garlic clove directly into the dressing and stir in the sea salt and cracked black pepper.
  4. Fold in the finely chopped fresh dill until the dressing looks speckled and green.
  5. Place the cucumbers and onions in a large bowl.
  6. Pour the dressing over the vegetables and toss gently until every slice is shimmering and coated.
  7. Taste a slice. If it’s too tart, add a tiny pinch of sugar; if it’s flat, add a tiny pinch of salt.
  8. Transfer to a chilled bowl until the salad feels icy to the touch. Serve immediately.
