Ingredients:

  • 4 tbsp (56g) unsalted butter, softened
  • 1/4 cup (50g) light brown sugar, packed
  • 1 tsp (2.6g) ground cinnamon
  • 4 oz (113g) cream cheese, softened
  • 8 slices white sandwich bread
  • 2 large eggs
  • 1/2 cup (120ml) whole milk
  • 1 tsp (2.6g) ground cinnamon
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (60g) powdered sugar
  • 1 tbsp (15ml) milk
  • 1/4 tsp (1.2ml) vanilla extract

Instructions:

  1. Remove the crusts from 8 slices of white sandwich bread. Use a rolling pin to flatten each slice until thin and pliable.
  2. Spread a thin layer of softened cream cheese across the flattened bread.
  3. Combine softened butter, brown sugar, and cinnamon; sprinkle the mixture evenly over the cream cheese layer.
  4. Roll the bread tightly from one side to the other.
  5. In a shallow dish, whisk together eggs, milk, cinnamon, vanilla, and salt.
  6. Quickly dip each roll-up into the batter, avoiding over-soaking.
  7. Heat a knob of butter in a skillet over medium heat. Place rolls seam-side down and fry, turning frequently, until all sides are golden brown.
  8. Optional: Whisk powdered sugar, milk, and vanilla extract together to create a glaze and drizzle over the finished roll-ups.
