Ingredients:

  • 1 lb fresh strawberries, large and firm with green hulls attached
  • 12 oz high-quality semi-sweet chocolate (60% cacao), chopped
  • 1 tsp refined coconut oil
  • 2 oz white chocolate
  • 1 pinch flaky sea salt

Instructions:

  1. Wash and dry 1 lb fresh strawberries. Note: They must be bone dry or the chocolate will not adhere.
  2. Chop 12 oz semi sweet chocolate into small, uniform pieces. Note: This ensures it melts at the same rate without burning.
  3. Prepare a double boiler by placing the chocolate and 1 tsp refined coconut oil in a bowl over simmering water.
  4. Melt gently while stirring constantly until the mixture is silky and flows like ribbons.
  5. Remove from heat once 90% is melted and stir until the remaining chunks disappear. Note: This is the seeding shortcut for a better temper.
  6. Hold a strawberry by the green hull and dip it into the chocolate, swirling it to coat.
  7. Lift and shake the berry gently over the bowl until the excess chocolate drips off completely.
  8. Place the berry onto a parchment lined tray.
  9. Melt white chocolate in 15 second bursts in the microwave until fluid.
  10. Drizzle over the berries and sprinkle with a pinch of flaky sea salt until the patterns are set and shimmering.
