Ingredients:

  • 1.5 lbs Lean Ground Beef (90/10)
  • 1 small Yellow Onion, finely diced
  • 2 cloves Garlic, minced
  • 1 tsp Sea Salt
  • 0.5 tsp Cracked Black Pepper
  • 1 tsp Worcestershire Sauce
  • 10.5 oz Low-Sodium Cream of Mushroom soup
  • 0.5 cup Low-Fat Sour Cream
  • 0.25 cup Skim Milk
  • 2 cups Frozen Mixed Vegetables
  • 2 cups Sharp Cheddar Cheese, freshly shredded
  • 28 oz Frozen Tater Tots

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium-high heat, brown the ground beef. As the meat develops a mahogany-colored sear, add the diced onions and minced garlic. Cook until the onions are translucent.
  3. Drain the excess fat from the skillet into a heat-safe container to ensure a light and crisp finish.
  4. Stir in the sea salt, cracked black pepper, and Worcestershire sauce. Add the cream of mushroom soup, low-fat sour cream, skim milk, and frozen mixed vegetables. Mix until well combined and velvety.
  5. Transfer the beef mixture to a 9x13-inch baking dish, spreading it into an even layer.
  6. Sprinkle the freshly shredded sharp cheddar cheese evenly over the beef mixture.
  7. Arrange the frozen tater tots in a single, tight layer across the top of the cheese.
  8. Bake for 40 minutes, or until the tater tots are golden brown and shattering-crisp and the edges are bubbling.
