Ingredients:

  • 4 large eggs
  • 2 tbsp whole milk
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 4 medium (8-inch) flour tortillas
  • 2 cups shredded sharp cheddar cheese
  • 2 tbsp unsalted butter

Instructions:

  1. In a small bowl, beat the eggs, milk, salt, and pepper until the mixture is uniform and frothy.
  2. Melt 1 tbsp of butter in a 10-inch non-stick skillet over medium-low heat. Pour in the egg mixture and stir gently until the eggs are barely set but still moist, then remove from the pan immediately.
  3. Wipe the skillet clean and melt the remaining 1 tbsp of butter.
  4. Place one tortilla in the pan. Sprinkle a generous layer of shredded sharp cheddar cheese across the surface, then pile the scrambled eggs onto one half.
  5. Fold the tortilla over to create a half-moon shape.
  6. Press down firmly with a spatula and cook for 2–3 minutes per side until the tortilla is golden-brown and the cheese is molten.
  7. Repeat the assembly and searing process for the remaining tortillas.
