Ingredients:
- 4 large eggs
- 2 tbsp whole milk
- 1/4 tsp salt
- 1/8 tsp black pepper
- 4 medium (8-inch) flour tortillas
- 2 cups shredded sharp cheddar cheese
- 2 tbsp unsalted butter
Instructions:
- In a small bowl, beat the eggs, milk, salt, and pepper until the mixture is uniform and frothy.
- Melt 1 tbsp of butter in a 10-inch non-stick skillet over medium-low heat. Pour in the egg mixture and stir gently until the eggs are barely set but still moist, then remove from the pan immediately.
- Wipe the skillet clean and melt the remaining 1 tbsp of butter.
- Place one tortilla in the pan. Sprinkle a generous layer of shredded sharp cheddar cheese across the surface, then pile the scrambled eggs onto one half.
- Fold the tortilla over to create a half-moon shape.
- Press down firmly with a spatula and cook for 2–3 minutes per side until the tortilla is golden-brown and the cheese is molten.
- Repeat the assembly and searing process for the remaining tortillas.
