Ingredients:

  • 315g all-purpose flour
  • 15g granulated sugar
  • 20g aluminum-free baking powder
  • 6g sea salt
  • 200g low-fat Greek yogurt
  • 160ml skim milk
  • 113g salted grass-fed butter

Instructions:

  1. Preheat your oven to 450°F (230°C). Place the 113g stick of butter into a 9x9-inch baking dish and set in the oven to melt until bubbling.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and sea salt.
  3. Combine the Greek yogurt and skim milk, then pour into the dry ingredients. Stir with a silicone spatula just until the flour streaks disappear and a wet, shaggy dough forms.
  4. Remove the hot pan from the oven. Pour the dough directly into the center of the melted butter and gently spread it to the edges using a spatula.
  5. Using a knife or bench scraper, score the dough into 9 even squares. Bake for 25 minutes until the top is deep golden brown and the butter has been absorbed into the crust.
