Ingredients:

  • 1 lb pizza dough, room temperature
  • 1/2 cup buffalo wing sauce
  • 2 tbsp unsalted butter, melted
  • 1/2 tsp garlic powder
  • 2 cups rotisserie chicken breast, shredded
  • 2 cups low-moisture mozzarella cheese, freshly shredded
  • 1/4 cup red onion, thinly shaved
  • 1/4 cup blue cheese crumbles
  • 1/4 cup creamy ranch dressing
  • 2 tbsp fresh chives, finely sliced
  • 1/2 tsp red pepper flakes

Instructions:

  1. Position a pizza stone or inverted baking sheet on the middle rack. Preheat oven to 450°F (230°C) for at least 30 minutes to ensure a crisp bottom crust.
  2. In a medium bowl, toss the shredded rotisserie chicken with 1/4 cup of the buffalo sauce until evenly coated.
  3. Mix the 1/2 cup (120ml) sauce with the 2 tbsp (30g) melted butter and 1/2 tsp (1g) garlic powder in a small bowl.
  4. Stretch the pizza dough on a floured surface into a 14-inch circle. Spread the remaining buffalo sauce mixture thinly over the dough, leaving a 1-inch border.
  5. Distribute the shredded mozzarella evenly over the sauce, followed by the buffalo-coated chicken. Slide the pizza onto the preheated stone.
  6. Bake for 15 minutes until the crust is golden brown and the cheese is bubbling with golden spots.
  7. Remove from oven and immediately top with shaved red onions, blue cheese crumbles, a drizzle of ranch dressing, and fresh chives.
