Ingredients:

  • 1/2 cup hummus or Greek yogurt dip
  • 1/2 cup cucumber slices or baby carrots
  • 1/2 cup cooked quinoa or brown rice

Instructions:

  1. Finely chop the broccoli. If using frozen broccoli, ensure it is completely thawed and squeezed dry with a paper towel to remove excess moisture.
  2. In a large mixing bowl, combine the chopped broccoli, shredded sharp cheddar, beaten egg, panko breadcrumbs, garlic powder, salt, and black pepper. Stir until the mixture becomes a cohesive, sticky mass.
  3. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly brush the surface with olive oil.
  4. Shape the broccoli mixture into small bites and place them on the prepared baking sheet.
  5. Bake for 20 minutes until the exterior is golden-brown and crispy.
  6. Arrange the baked broccoli bites in a divided bento box along with the sliced strawberries, hummus or Greek yogurt dip, cucumber slices or carrots, and cooked quinoa or brown rice.
