- 1 cup sliced strawberries or apple wedges
- 1/2 cup hummus or Greek yogurt dip
- 1/2 cup cucumber slices or baby carrots
- 1/2 cup cooked quinoa or brown rice
Instructions:
- Finely chop the broccoli. If using frozen broccoli, ensure it is completely thawed and squeezed dry with a paper towel to remove excess moisture.
- In a large mixing bowl, combine the chopped broccoli, shredded sharp cheddar, beaten egg, panko breadcrumbs, garlic powder, salt, and black pepper. Stir until the mixture becomes a cohesive, sticky mass.
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly brush the surface with olive oil.
- Shape the broccoli mixture into small bites and place them on the prepared baking sheet.
- Bake for 20 minutes until the exterior is golden-brown and crispy.
- Arrange the baked broccoli bites in a divided bento box along with the sliced strawberries, hummus or Greek yogurt dip, cucumber slices or carrots, and cooked quinoa or brown rice.
