Ingredients:
- 2 cups (450g) cottage cheese
- 3 large (150g) eggs
- 1/4 cup (60ml) maple syrup
- 1 tsp (5ml) vanilla extract
- 1/2 tsp (3g) salt
- 1/2 cup (60g) oat flour
- 1 tsp (5g) baking powder
- 1 tsp (2g) ground cinnamon
- 1 cup (150g) fresh blueberries
- 2 tbsp (15g) sliced almonds
Instructions:
- Preheat the oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
- Combine cottage cheese, eggs, maple syrup, vanilla extract, and salt in a high-speed blender. Process on high until the mixture is completely smooth and glossy.
- Add oat flour, baking powder, and ground cinnamon to the blender. Pulse 3-4 times just until incorporated.
- Transfer the batter to a bowl and gently fold in the fresh blueberries using a spatula until evenly distributed.
- Pour the batter into the prepared baking dish, smooth the top, and sprinkle sliced almonds across the surface.
- Bake for 35-40 minutes until the edges are golden brown and the center has a slight, springy jiggle.
