Ingredients:

  • 1.5 cups whole wheat pastry flour
  • 2 tbsp cornstarch
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 2 tbsp coconut sugar
  • 1 cup low-fat buttermilk
  • 0.5 cup plain Greek yogurt
  • 2 large eggs
  • 3 tbsp melted coconut oil
  • 1 tsp pure vanilla extract

Instructions:

  1. In a large bowl, whisk together the whole wheat pastry flour, cornstarch, baking powder, baking soda, salt, and coconut sugar until aerated and lump-free.
  2. In a separate bowl, whisk together the eggs, buttermilk, Greek yogurt, melted coconut oil, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients. Fold gently with a spatula until just combined; stop while a few small lumps remain to ensure a light texture.
  4. Preheat the waffle iron to a medium-high setting and lightly grease the surface.
  5. Pour the batter into the waffle iron according to the machine's capacity.
  6. Close the lid and cook until steam stops billowing from the sides, indicating the exterior is crispy and the structure is set.
  7. Transfer finished waffles to a wire cooling rack to maintain crispness. To make sticks, use a serrated knife to cut the waffles into strips.
