Ingredients:

  • 1 lb lean ground chicken
  • 1/2 cup whole wheat breadcrumbs
  • 1 large egg, lightly beaten
  • 1/4 cup fresh Italian parsley, finely chopped
  • 1/3 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1/4 cup yellow onion, very finely minced
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes

Instructions:

  1. In a large bowl, combine the breadcrumbs, beaten egg, Parmesan, minced garlic, onion, parsley, and seasonings. Stir until aromatics are evenly distributed.
  2. Add the ground chicken to the bowl and mix with your hands or a fork until just combined; avoid over-mixing to prevent tough meatballs.
  3. Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper or a silicone baking mat.
  4. Using a scoop or tablespoon, form the mixture into golf-ball-sized spheres (approximately 1.5 inches in diameter). Place them on the sheet, leaving 1 inch of space between each.
  5. Bake on the center rack for 16–20 minutes, using an instant-read thermometer to ensure the center reaches the safe internal temperature.
