Ingredients:
- 1 lb lean ground chicken
- 1/2 cup whole wheat breadcrumbs
- 1 large egg, lightly beaten
- 1/4 cup fresh Italian parsley, finely chopped
- 1/3 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1/4 cup yellow onion, very finely minced
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp dried oregano
- 1/4 tsp red pepper flakes
Instructions:
- In a large bowl, combine the breadcrumbs, beaten egg, Parmesan, minced garlic, onion, parsley, and seasonings. Stir until aromatics are evenly distributed.
- Add the ground chicken to the bowl and mix with your hands or a fork until just combined; avoid over-mixing to prevent tough meatballs.
- Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper or a silicone baking mat.
- Using a scoop or tablespoon, form the mixture into golf-ball-sized spheres (approximately 1.5 inches in diameter). Place them on the sheet, leaving 1 inch of space between each.
- Bake on the center rack for 16–20 minutes, using an instant-read thermometer to ensure the center reaches the safe internal temperature.
