Ingredients:
- 2 lbs ground beef (80/20 lean-to-fat ratio)
- 2 tbsp kosher salt
- 2 tbsp brown sugar, packed
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp ground black pepper
- ½ tsp ground cloves
- ½ tsp ground allspice
- ¼ tsp cayenne pepper
- 2 tbsp apple cider vinegar
- 1 tbsp Worcestershire sauce
Instructions:
- Combine the ground beef, salt, brown sugar, and all spices in a large bowl.
- Pour in the apple cider vinegar and Worcestershire sauce. Mix the meat vigorously for 3-5 minutes using hands or a stand mixer with a paddle attachment until the meat becomes tacky or sticky to the touch.
- Divide the meat into two equal portions and shape each into a cylinder approximately 8 inches long and 3 inches in diameter.
- Wrap each log tightly in heavy-duty aluminum foil, twisting the ends like a candy wrapper to create an airtight seal.
- Place the wrapped logs in the refrigerator for 24 hours to allow the flavors to marry and the structure to set.
- Place the logs on a wire roasting rack inside a shallow pan and bake at a low temperature for 2 hours until the internal temperature reaches the desired level of doneness.
