Ingredients:

  • 2 lbs ground beef (80/20 lean-to-fat ratio)
  • 2 tbsp kosher salt
  • 2 tbsp brown sugar, packed
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp ground black pepper
  • ½ tsp ground cloves
  • ½ tsp ground allspice
  • ¼ tsp cayenne pepper
  • 2 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce

Instructions:

  1. Combine the ground beef, salt, brown sugar, and all spices in a large bowl.
  2. Pour in the apple cider vinegar and Worcestershire sauce. Mix the meat vigorously for 3-5 minutes using hands or a stand mixer with a paddle attachment until the meat becomes tacky or sticky to the touch.
  3. Divide the meat into two equal portions and shape each into a cylinder approximately 8 inches long and 3 inches in diameter.
  4. Wrap each log tightly in heavy-duty aluminum foil, twisting the ends like a candy wrapper to create an airtight seal.
  5. Place the wrapped logs in the refrigerator for 24 hours to allow the flavors to marry and the structure to set.
  6. Place the logs on a wire roasting rack inside a shallow pan and bake at a low temperature for 2 hours until the internal temperature reaches the desired level of doneness.
